Meet Domaine Dandelion, Christian Knott’s little corner of Burgundy’s Hautes-Côtes de Beaune — and one of the most sought-after names in the new wave of Burgundy producers. Having spent years as cellar master at Domaine Chandon de Briailles, Christian now makes his own wines in Mavilly-Mandelot, bringing a thoughtful touch and a love for this cooler, higher-altitude side of Burgundy.

Old vines, organically farmed parcels and a light touch in the cellar are the name of the game. Spontaneous ferments and whole-bunch fermentation bring plenty of aromatic lift, while the cooler climate keeps things fresh, lively and beautifully balanced. Expect bright fruit, fine tannins, a little mineral edge and more depth than you might expect — wines with elegance and energy, but never too polished for their own good.
