Amaury Beaufort
Amaury Beaufort shatters Champagne conventions: radically biodynamic, uncompromising on the absence of chemicals, and with minimalist winemaking reduced to the essentials. In his "garden" in Polisy, on the Côte des Bars, he produces vibrant, cultured Champagnes from another planet.
He comes from a large family of Champagne winegrowers. His father André Beaufort , built his reputation on the villages of Ambonnay and Polisy. Amaury's grandfather Jacques Beaufort was one of the pioneers of organic farming, having started organic farming in 1971 following an allergy to the synthetic products then used in the vineyards.
After training at the Beaune wine school, Amaury initially settled in Tonnerre in the Chablis region. He later decided to take over a vineyard of 88 ares in Aube that belonged to his father. Amaury appreciated this microscopic size. All the vines are organically farmed and the family vineyards have not seen any chemicals since the 1970s. Occasionally he buys a few grapes from his neighbors to supplement his production.
