Namazake refers to unpasteurized, raw sake, sometimes with a bit of CO2 leftover from the fermentation process, giving it a bit of bubble and fizz. Some nama is available year round, but most are seasonal.
Often, Namazake are also bottled undiluted (genshu) and unfined (muroka) to deliver a fresh from the tap experience. Breaking it down, Muroka Nama Genshu sake are lively, vivacious and undiluted.
Our sake are shipped and stored chilled to preserve their quality, and we highly recommend storing them chilled at home.
