Based in the tiny hamlet of Polisot in the southern Cote des Bars region of Champagne, Dominique Moreau is producing some of the most dynamic and striking wines of the area. Soils here are mostly Kimmeridgian calcareous marls, same as in Chablis and Sancerre. Naming her estate after her grandmother, Marie Courtin, Dominique has set out to craft Champagnes which emphasise how her specific terroir can be expressed in a given vintage. Her wines then are single vineyard and single vintage, made with meticulously grown fruit from biodynamically-grown grapes, see no dosage, and sulfur is used sparingly or not at all.

Pinot Noir from 40-45 year old vines on clay limestone soils with strips of Kimmeridgian limestone. 4 days maceration on the skins. Fermented with native yeasts in combination of stainless steel tank and used barriques. All yeasts are selected from their parcel of origin and cultivated separately. Unfined, unfiltered. Zero dosage. 


About the Producer

Dominique Moreau has been making single varietal, single vineyard, single vintage, no dosage Champagnes from her tiny 2.5ha estate since 2005. The estate’s massale-selected vines include a single hillside vineyard of Pinot Noir, with a small amount of Chardonnay and Pinot Blanc, all planted by her father-in-law in the 1970’s. Dominique named the estate after her grandmother, Marie Courtin, who Dominique recalls as being “a strong woman of the earth.” Obtaining ripe, pristine fruit is incredibly important since Dominique’s wines are non-dosé — which means they don’t have the addition of sugar to round out hard edges or mask imbalances. This is why each parcel is farmed organically (certified since the 2005 vintage) and biodynamically (certified since the 2006 vintage).

Dominique makes her own compost, plows, and focuses on de-budding in the spring in order to reduce the chances of rot, always a risk in this damp region. This combination of diligent vineyard work, low yields, clay-limestone soils and a southern exposure, gives these wines both power and precision, brimming with energy and lots of mineral intensity. The fruit is fermented with a yeast strain that was cultivated exclusively from her grapes during the 2003 harvest. These native yeasts are used for both primary and secondary fermentations.

The names of the wines carry spiritual significance for Dominique as well. She recommends that her wines be served in traditional white wine glasses to allow for their development through increased aeration.

Complimentary delivery on orders $150+, or $25 flat fee. Orders are delivered from 12pm - 8pm. Next day delivery cut off is at 12pm. Orders must be placed by 12pm to be delivered the following day. Orders placed after 12pm will be delivered the day after.
No 'next day' delivery on Sundays; only 1-hour deliveries apply. 'Next day' orders placed after Friday 12pm will be fulfilled on Monday.

There will be no next-day deliveries on Sundays, public holidays or days that the store is closed, unless otherwise announced online.

1-Hour Delivery
Complimentary delivery on orders $300+, or $35 flat fee. Orders are delivered between 12pm - 4pm. Place order by 3pm latest to receive within the hour. Orders placed after 3pm cut off will be delivered the following day. Please expect delays with unfavourable weather conditions.
