Costa Esmeraldas is a family owned and operated 100-hectare cacao farm located in the Esmeraldas province of Ecuador. Rigorous fermentation, drying and grading processes produced the most consistent and beautiful cacao with a distinctive aroma.

Fossa Chocolate's high cacao % preparation highlights the sweet chestnut and floral notes of these Ecuadorian Nacional hybrids varietal beans.

Varietals: Ecuadorian Nacional hybrids: EET-95, EET-96, EET-103

Fermentation: Five-tiered cascade system. Cedro (Cedrela odorata) wood boxes with ~450 kg capacity. The fermenting mass is turned once at 36 hours, and then every morning until fermentation is complete. Total duration of fermentation is 5 ½ days.

Drying: Sun-dried on sliding mesh racks. High-walled polyethylene tunnels cover all drying structures. Gradual drying is practiced during the first three days. Finish-drying to a moisture content of 7% is on concrete patios.

Standard Delivery
Complimentary standard delivery on orders $100+ within 3 working days. For this option, we are unable to guarantee chilled delivery.

Next Day Delivery
Complimentary delivery on orders $150+, or $25 flat fee. Orders are delivered from 12pm - 8pm. Next day delivery cut off is at 12pm. Orders must be placed by 12pm to be delivered the following day. Orders placed after 12pm will be delivered the day after. No 'next day' delivery on Sundays; only 1-hour deliveries apply. 'Next day' orders placed after Friday 12pm will be fulfilled on Monday.

There will be no next-day deliveries on Sundays, public holidays or days that the store is closed, unless otherwise announced online.

1-Hour Delivery
Complimentary delivery on orders $300+, or $35 flat fee. Orders are delivered between 12pm - 4pm. Place order by 3pm latest to receive within the hour. Orders placed after 3pm cut off will be delivered the following day. Please expect delays with unfavourable weather conditions.

Wrong Addresses or No Recipients
Please ensure that delivery addresses, particularly for gifts, are entered correctly otherwise additional costs may be incurred.
