P like Pinot Noir, which comes from the plateau on the basaltic ground of Gergovie. The grape was macerated in whole bunches in stainless steel tank. The Auvergne terroir is there, for our greatest happiness.

Mineral, complex, flexible and even more attractive if you take the time to take out the carafe.

Iconic winemaker Patrick Bouju is the man behind Domaine La Boheme. He has several small plots of vines around his village in the Auvergne region, and the soil is heavily basaltic thanks to the chain of extinct volcanoes. His wines are quaffable natural wines that are fermented spontaneously with native yeast, and are not fined or filtered.
