Elegant, refreshing and delicate with juicy tones of red berries and fruit. A mono-variety Rosé made from 100% Meunier grapes harvested from 2 old plots - one from 1960 and the other from 1925 on loamy soils. Grapes are macerated for 22 hours then vinified 80% in steel and 20% in fût de chêne. This Brut Nature has no final dosage.

Champagne Bourgeois-Diaz is currently run by the fourth generation with Jerome Bourgeois at the helm. Among the estate's 7 hectares of vineyards in Crouttes-sur-Marne and Vallee de la Marne, about 3.5 hectares is planted with Meunier, 2 hectares with PInor Noir and 1.3 hectares with Chardonnay, and a tiny plot of Pinot Blanc. Vines are on average 40 years and derive their vitality from the calcereous clay soil. Their champagnes follow the rhythm of nature, expressing the essence of the terroir in the glass.

Jerome has converted the Domaine to full biodynamic practices, and there are no pesticides or chemical fertilizers used in the vineyards. During harvest, grapes are collected only when they are ripe, so that only perfect healthy grapes are brought to the cellar. Bunches are pressed in a traditional Coquard press, separating each plot and each grape variety. They're then racked and fermented in a vat with indigenous yeast, and undergo malolactic fermentation spontaneously.
