Henri Chauvet De Cendre et d’Âme 2023

This wine is made from Gamays and very old Pinot Noirs originating from a massal selection from Burgundy (the first vineyard planted by Claude Sauvat, who created the estate). It comes from a part of the vineyard, at the exit of the village of Boudes, where there is a strong dominance of basalt with highly fragmented limestone. In 2022, the Gamays were in "Abrupts" and the Pinot Noirs in "Vie ordinaire." In 2023, he isolated this part because it has something very unique.
10 to 12 days of maceration with whole bunches in large stainless steel tanks. Only pump-overs with a bucket are done to wet the cap. The wine is aged for 12 months in old 228-liter barrels, followed by 6 months in bottle.
The is the most mineral and taut of the 2023s, and it opens up beautifully over a couple of hours.
