A semi-dry, lightly sparkling mead that is slow-fermented at low temperatures made with 100% pure honey. This is the very first mead they brewed after setting up their brewery.
Giou was aged at low temperatures for a long time, and fermentation proceeded slowly despite the extremely low temperatures. They thought it wouldn't be a big deal if the yeast was active at 1-2°C, so they left it to sit for a long time, and perhaps that paid off, as when they took a sample out of the tank after a long time, it had a refreshingly crisp taste and an aroma they'd never smelled before.
Recommended to store upright.
