Established in 1912, Miyoshino Jozo produces a unique range of sake. The current Toji (Master Brewer) is Teruaki Hashimoto, whose sake-making philosophy is very unique, with a strong emphasis on yeast. He has a firm belief that the ‘air makes the sake’. As with many of his sake the Mizumoto utilises naturally occurring yeast, resulting in a sake with high acidity. The Mizumoto is made using a technique called Bodai-moto, which increases the acidity in the starter water.
Bodai-moto is a starter method created by combining raw polished rice, a small amount of cooked rice and water and incubated for anywhere from three - ten days. During this time lactic bacteria falls into the mixture and the liquid becomes sour water. After this time frame the raw rice is taken away and steamed before being returning to the sour water. Then an addition of koji rice is added. Then fermentation by natural yeast takes just two weeks. Left unfiltered, unpasteurized and undiluted.
Sweet on the palate and dry on the finish with notes of ripened fruits and wonderful aroma of fresh yoghurt. Think chestnuts, raw cheese.

Next Day Delivery
Complimentary delivery on orders $150+, or $25 flat fee. Orders are delivered from 12pm - 8pm. Next day delivery cut off is at 12pm. Orders must be placed by 12pm to be delivered the following day. Orders placed after 12pm will be delivered the day after. No 'next day' delivery on Sundays; only 1-hour deliveries apply. 'Next day' orders placed after Friday 12pm will be fulfilled on Monday.
There will be no next-day deliveries on Sundays, public holidays or days that the store is closed, unless otherwise announced online.
1-Hour Delivery
Complimentary delivery on orders $300+, or $35 flat fee. Orders are delivered between 12pm - 4pm. Place order by 3pm latest to receive within the hour. Orders placed after 3pm cut off will be delivered the following day. Please expect delays with unfavourable weather conditions.
Wrong Addresses or No Recipients
Please ensure that delivery addresses, particularly for gifts, are entered correctly otherwise additional costs may be incurred.
