From high in the mountains in the Cañada region 6 hours out of Oaxaca, this is an unproofed super silky version of Isidoro's wild fermented rum.
The high altitude causes the sugar cane varietal to have a longer growth cycle (around 18 months) than in a Caribbean environment at sea level but also the low temperature (especially at night) results in a much slower and gentler fermentation. This results in a super light and grassy rum with its own distinct flavour and aromatic profile.
An absolute banger and makes the killer daiquiri!
TASTING NOTES: Think stone fruit such as apricots ripe banana, cut grass and a wild lactic ferment note.
