Organic Chardonnay sourced entirely from a single called Les Rocheforts, situated in the town of Bisseuil, a Premier Cru village in the Cote des Blancs. Vines are on average 30 years, and the soil is chalk with a southeast exposure.

Primary fermentation happens in tank with malolactic fermentation in a combination of barrel and tank. Rich and lively with tangy acidity. Lots of green apple, almond pear, lemon and vanilla.  
About the Producer

Étienne Calsac is one of Champagne's rising stars. In 2010 at the age of 26, he became responsible for his family's domaine: 2.8 hectares of vineyards spread between Avize, Grauves and Bisseuil.

Each parcel is vinified separately, with a small percentage of the Rose de Craie and Infiniment Blanc aged in old barrels. All bottles are aged on the lees for 36 months, and an additional 3 months is given after disgorgement before the wines are released.Calsac has an eye for experimentation, so expect to see new releases over the next few years, including Pinot Noir from family vineyards in the Aube and an extremely limited bottling from the monopole Clos des Maladries in Avize, planted by Etienne's grandfather. His commitment to site specific Champagnes continues to intrigue.

Complimentary standard delivery on orders $100+ within 3 working days. For this option, we are unable to guarantee chilled delivery.

Next Day Delivery
Complimentary delivery on orders $150+, or $25 flat fee. Orders are delivered from 12pm - 8pm. Next day delivery cut off is at 12pm. Orders must be placed by 12pm to be delivered the following day. Orders placed after 12pm will be delivered the day after. No 'next day' delivery on Sundays; only 1-hour deliveries apply. 'Next day' orders placed after Friday 12pm will be fulfilled on Monday.

There will be no next-day deliveries on Sundays, public holidays or days that the store is closed, unless otherwise announced online.

1-Hour Delivery
Complimentary delivery on orders $300+, or $35 flat fee. Orders are delivered between 12pm - 4pm. Place order by 3pm latest to receive within the hour. Orders placed after 3pm cut off will be delivered the following day. Please expect delays with unfavourable weather conditions.

Please ensure that delivery addresses, particularly for gifts, are entered correctly otherwise additional costs may be incurred.
