"We want to make wines where you are not satisfied with one glass but want to enjoy the whole bottle,” says Ken Sasaki. It’s an unassuming ambition for a couple whose training reads like a sommelier’s wish list: Ken studied winemaking in Beaune, while Kazuko studied oenology at the Université de Bourgogne. Both went on to train at estates such as Domaine Leflaive, Domaine Binner, and Chapoutier.

After returning to Japan, they spent years searching for the right piece of land before settling near Hakodate in 2011. They named their estate Nora-Kura, after the word nouraku (農楽): the joy of farming.

Ken and Kazuko's aim has been to make wines that express a distinctly Japanese sense of place. In the cellar, that means intervention is kept to an absolute minimum and grape varieties are left off the label entirely. “What matters is where it’s from, not what it’s made of,” says Ken.

Their wines are bright and textural, with a moreish umami undertone and a finesse that echoes their Burgundian training – and they’re so elusive that most bottles sell out in Japan before anyone knows they’ve been released.

1-Hour Delivery
