The first spirit to come out of Jerome's barrels, this Fine Champenoise is made from white champagne wine (50% Meunier, 50% Pinot Noir) from a single plot in Saulchéry.
After distillation, our exceptional Fine Champenoise is aged in wood for two years. Viny and generous, golden brown in color, it develops light and harmonious caramel notes and a subtle woody aroma.
Distilled in 2022, Rebellion is intended for discerning and refined alcohol lovers and collectors. 216 bottles, hand-numbered.

Complimentary standard delivery on orders $100+ within 3 working days. For this option, we are unable to guarantee chilled delivery.
Next Day Delivery
Complimentary delivery on orders $150+, or $25 flat fee. Orders are delivered from 12pm - 8pm. Next day delivery cut off is at 12pm. Orders must be placed by 12pm to be delivered the following day. Orders placed after 12pm will be delivered the day after. No 'next day' delivery on Sundays; only 1-hour deliveries apply. 'Next day' orders placed after Friday 12pm will be fulfilled on Monday.
There will be no next-day deliveries on Sundays, public holidays or days that the store is closed, unless otherwise announced online.
1-Hour Delivery
Complimentary delivery on orders $300+, or $35 flat fee. Orders are delivered between 12pm - 4pm. Place order by 3pm latest to receive within the hour. Orders placed after 3pm cut off will be delivered the following day. Please expect delays with unfavourable weather conditions.
