About the Producer

Chanterêves is a husband and a wife team launched in 2010 by two oenologists, Tomoko Kuriyama and Guillaume Bott.

Born in Japan, Tomoko has been passionate about food and wine from an early age. She attributes this to her maternal grandmother who was a cooking teacher with her own cooking show on national television and her father who a fan of good Bordeaux and Burgundy.

Her professional career began in Germany where she apprenticed in several wineries including Hermann Schmoranz of Weingut Georg Breuer and Weingut Altenkirch in Rheingau which specialized in Riesling and Pinot Noir.

Guillaume was born in Dijon but grew up in Beaune. Being a Burgundian, the passion for wine came naturally. When the time came to choose a path, he chose to become a winemaker and attended the Lycée Viticole in Beaune.

His first job was as the right hand of Gérard Boudot of Domaine Etienne Sauzet in Puligny-Montrachet. During his time there, he gained experience in vinifying the great Chardonnay of Burgundy. He expanded his experience to Pinot Noir when he moved to Domaine Simon Bize et Fils in Savigny-les-Beaune to assist Patrick Bize.

Guillaume and Tomoko first met in 2005 when she interned at Domaine Simon Bize during harvest. Their shared passion for Burgundy, winemaking philosophies and vision were so aligned that it was only a matter of time before they set out on their own.

Today, when people talk about new Burgundy (the wave of micro-négociants and young domaines reshaping a region defined by aristocratic grand cru addresses), Chanterêves is the name that invariably comes up. Tomoko and Guillaume have intertwined their unconditional commitment to regenerative farming and low-intervention winemaking with an understanding and appreciation for the terroir in Burgundy.

Their wines are precise, alive and unmistakably Burgundian. A keen favourite of ours at Temple Cellars.
