One of our fav breweries from Australia, Wildflower is back with a whole lot of new releases. Discover their range of ever evolving beers that play with different grain, hops and fruit. Definitely one for the beer enthusiasts and geeks. This tasting is on Sun 2 March and we are stoked to have a small allocation of beers meant for the Wildflower Collective only. Yes, that means you probably won't even be able to find much information online...

Wildflower Brewing & Blending is founded by Chris and Topher, 2 brothers-in-law in Marrickville, NSW, Australia. Made a little differently, their beers have been fermented with a diversity of yeasts and bacteria collected from flowers native to NSW... hence the name. Their practice has developed over time and so has their relationships with local regenerative growers of grain, hops and fruit, who they celebrate their agriculturally focused fermented ales with.

★ Beside Myself with Joy 2024 ★ 
Ale aged with honey and Riesling grapes.
The ale was brewed with Organic red wheat and Organic heritage barley wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW. Following primary fermentation it matured in oak for 11 months before being macerated and refermented with Post Brood 'honeywax' from Malfroy's Wild Honey ahead of a secondary maturation in oak. In harvest 2024, it was removed from barrel and refermented over whole bunch, hand picked, Organic Riesling grapes from Ravensworth Wines in Murrumbateman, NSW.
 
Following this maceration it was bottled with raw, unheated Blue Mountains Polyflora wild honey from naturally formed, bee-friendly Warré hives from Tim and Emma Malfroy and allowed to naturally condition and carbonate before release.

★ Descriptive Economy 2024 ★
A blend of ales aged with plumcots, Organic apricots and Ebony Sun Plums.
The ales were brewed with Organic red wheat and Organic heritage barley wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW. The first was macerated with 350g/l of plumcots from Yarralee Orchard in Bathurst, NSW for five months before being blended with two ales that were macerated and refermented with Organic Red Yellow apricots from Block 11 Organics in Orange, NSW and Ebony Sun plums from Thornbrook Orchard in Orange, NSW both at a rate of 400g/l for five and four months each, respectively.

It was bottled with raw, unheated Blue Mountains Polyflora wild honey from naturally formed, bee-friendly Warré hives from Tim and Emma Malfroy and allowed to naturally condition and carbonate before release. Made exclusively for The Collective.

★ Living in Discovery 2024 ★
Ale brewed with oyster shells and aged with Chardonnay grapes.
The ale was brewed in February 2023 with Organic Spitfire wheat, Organic heritage Spelt and Organic heritage barley wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW. Following primary fermentation it matured in oak for 14 months before being macerated and refermented with handpicked, whole bunch Chardonnay grapes from Swinging Bridge Wines in Orange, NSW.
Following this maceration it was bottled with raw, unheated Blue Mountains Polyflora wild honey from naturally formed, bee-friendly Warré hives from Tim and Emma Malfroy and allowed to naturally condition and carbonate before release.

★ Sailor Seeks Fossil 2024 ★
An ale aged with blueberries and Pinot Noir grapes.
The ale was brewed with Organic red wheat and Organic heritage barley wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW. Following primary fermentation it matured in oak for 14 months before being macerated and refermented with 500g/l of Organic blueberries from River Fossil Farm in Petcheys Bay, TAS. It was then further refermented on 350g/l of handpicked, whole bunch Pinor Noir grapes grown by Sailor Seeks Horse winery in Cradoc, TAS.
 
Following this double-maceration it was bottled with raw, unheated Blue Mountains Polyflora wild honey from naturally formed, bee-friendly Warré hives

An ongoing collaborative project with friend and fermentation guru Lucien Alperstein, this cider is their second release to use apples deliberately planted and grown in an orchard. Dry, sparkling cider in the pet nat style. Made from unsprayed fruit grown at Borrodell, Wiradjuri country. Featuring some of the best cider apple varieties you won’t find at the shops: Kingston Black, Dabinett, Golden Harvey, Bramley, Yarlington Mill + more. Wine is fine, and beer, sure, but don’t forget to make some space for cider, the underdog.
