You've heard of natural wines, but what about natural sake?
Introducing Terada Honke, one of the leading lights in the world of natural sake, and one of a handful of such breweries in Japan.
Masaru Terada is the 24th generation owner of an almost 350 year old brewery making sakes using only natural yeasts in the air, and employing the the Kimoto and ancient Bodaimoto brewing methods. The rice that they use - both from farmers they work with and their own cultivated rice - are free from pesticide and chemical fertilizers. All rice used in production if handwashed without machines, and fermentation is a slower-than-usual process.
Their sake is remarkable; we're talking good acid, robust flavours, and plenty of umami. And, potential for ageing. It is no wonder it is often used in fine dining pairings, even in non-Japanese restaurants!
