The result of a two week, semi-carbonic maceration of Gamay from a friend’s old vineyard in Saint-Germain-des-Nouelles in south Beaujolais). 30% of which have been destemmed and placed in the tank in layers, alternating with whole bunches, like a sandwich.

A fantastic expression of the freshness of Gamay, light and easy-drinking. We say it is pleasure to drink.

O2Y is unique collaboration between Olivier Guala, Yves Roy (from Domaine Nøvice) and Yoshi Kuroda (whose day job is with Emmanuel Houillon at Domaine Overnoy).

Finding vines in Jura is a challenge due to the popularity of the region and the ever changing climate, and O2Y began by using grapes meticulously sourced from biodynamic vineyards across Alsace, Savoie, Beaujolais, Burgundy, Jura and even Languedoc-Roussillon. But in 2023, O2Y finally acquired their own vines.

The three take turns overseeing the winemaking process; each making their own wine with their personal touch and decision-making. 

Their precise, vibrant and complex wines express a diversity of terroir with a distinctive lightness and balance.
