A distinct and fascinating wine made with Gewürztraminer gracefully aged in 50 litre casks. What sets it apart is its ever-changing nature, unveiling unique facets depending on when and where it is tasted.
At times, it is a dry, subtly mineral white wine. Or it is the total opposite, much more vegetal and aromatic, typical of Gewürztraminer.
What remains constant however is the inherent freshness.

O2Y is unique collaboration between Olivier Guala, Yves Roy (from Domaine Nøvice) and Yoshi Kuroda (whose day job is with Emmanuel Houillon at Domaine Overnoy).
Finding vines in Jura is a challenge due to the popularity of the region and the ever changing climate, and O2Y began by using grapes meticulously sourced from biodynamic vineyards across Alsace, Savoie, Beaujolais, Burgundy, Jura and even Languedoc-Roussillon. It is only in 2023 that O2Y managed to acquire their own vines.
The three take turns overseeing the winemaking process; each making their own wine with their personal touch and decision-making.
Their precise, vibrant and complex wines express a diversity of terroir with a distinctive lightness and balance.
