Grapes from 3 sites La Paille (white marls), Chez Eduard (limestone scree) and Le Feu (red marls and iron-rich red clay). Slow direct pressing and vatting in concrete to ferment dry, and aged in egg-shape concrete vats for 18 months. Beautiful white peras, spiced lemons and stone fruit with a hint of sesame seeds. Sizzling acidity matched by a complex and concentrated palate. The label is designed by celebrated French cartoonist Michel Tolmer. 

Dominic took over the estate in 1988, elevating Gringet from a notoriously average sparkling wine to a world-class, age-worth wine with personality and a sense of place. After his sudden departure in 2021, the estate was in a state of emergency. Many winemakers applied and the young Vincent Ruiz was the one to succeed. He arrived in Spring of 2022 from Cornas and is now following in his predecessor's footsteps. The vines he inherited have been worked without chemicals for over 20 years, and he does not use any machines, choosing to work with his hands instead. He favours long pressings, whole cluster macerations with gentle extraction in concrete or ceramic and aged on fine lees without racking until bottling.
