A Hertfordshire based spontaneous beer producer founded by Charlie Wood and George Stagg.
inspired by the Lambic beer brewed by Brasserie-Brouwerij Cantillon, their beers share a lot in common with Belgian Lambics and related styles rested on fruits, but also aim to emphasise, as nodded to by the name, the influence of cider and wine production methods and flavour profiles.
Their focus is on producing 100% spontaneously fermented beers aged in old French Oak barrels made with high-quality British ingredients with a provenance. Farmers and growers are worked with directly, and an effort is made to source as close to the Blendery as possible.
They brew in the cold months and fruit in the warm. Each beer they make is of that year. It is of that season and it cannot be replicated anywhere else in the world. These beers are incredibly small-batch, seasonal and unique. Exciting stuff.
