The first of two variants for St Phoebe 2023, this release was made with 475kg of fresh, whole, tree ripened Ebony Sun plums from Thornbrook Orchard. Unlike the other Saints blends, the fruit went straight onto beer rather than going through an initial carbonic maceration... and after 4 months was bottled and allowed to naturally carbonate and mature before release. The results speak for themselves...

The base beer is brewed entirely with certified organic cereals from Chris and Sam Greenwood's farm in Coleambally NSW. Organic raw red wheat with organic schooner barley malted to a pale roast by Voyager Craft Malt. It is made with filtered Sydney water and Motueka (NZ) hops. Finally, it was fermented with Wildflower’s house culture of microflora wholly foraged from native flowers in NSW. It was bottled on 27 July 2023 and naturally conditioned for 10 weeks.

Tasting notes: “The most gorgeous deep pink you’ve ever seen. The nose is all sweet fruit, bright plum and raspberry with a touch of spice, floral perfume and an elegant touch of funk. On the palate, earthy candied fruit and a cleansing acidity. This beer deserves to be drunk on a picnic rug alongside some delicious cheese.”
About the Producer

Wildflower was co-founded in 2016 by brothers-in-law Topher Boehm and Chris Allen.

Made a little differently, their beers have been fermented with a diversity of yeasts and bacteria collected from flowers native to NSW... hence the name. Their practice has developed over time and so has their relationships with local regenerative growers of grain, hops and fruit, who they celebrate their agriculturally focused fermented ales with.

Complimentary standard delivery on orders $100+ within 3 working days. For this option, we are unable to guarantee chilled delivery.

Next Day Delivery
Complimentary delivery on orders $150+, or $25 flat fee. Orders are delivered from 12pm - 8pm. Next day delivery cut off is at 12pm. Orders must be placed by 12pm to be delivered the following day. Orders placed after 12pm will be delivered the day after. No 'next day' delivery on Sundays; only 1-hour deliveries apply. 'Next day' orders placed after Friday 12pm will be fulfilled on Monday.

There will be no next-day deliveries on Sundays, public holidays or days that the store is closed, unless otherwise announced online.

1-Hour Delivery
Complimentary delivery on orders $300+, or $35 flat fee. Orders are delivered between 12pm - 4pm. Place order by 3pm latest to receive within the hour. Orders placed after 3pm cut off will be delivered the following day. Please expect delays with unfavourable weather conditions.
