do.t.e. Insyeme 2017
2017 was only Filippo’s third vintage. A stunning 100% Syrah from a single vineyard. Mostly whole-bunch fermented (approximately 75%) in cement, 20 days on the skins. Aged separately for 18 months in two old barrels, one 5 HL terracotta amphora and one 20 HL concrete vat. Followed by a further 6 months of elevage.
Takes you back to Northern Rhone. Intense and vibrant with ripe black cherries, liquorice, thyme and wild flowers.
