Sparkling Aligote! Fresh, with notes of citrus and apricots. This fun pet-nat started off as an experiment, but has since become mainstay. Julien puts a 'tea bag' of apricots in with the fermenting wine, and it develops undertones of apricots without overpowering the sparkling wine. No dosage, no sugar added. Limited!

This wine is homage to a beer that Julien loves very much. He was inspired by the famous Belgian Lambic brewer Cantillon. They have a beer called Fou'Foune which, no surprises here, contain apricots - 300g of apricots for every 1L of beer, and this is left to macerate for 5 weeks.
