Layered, complex and yet mellow and elegant, this sake offers a fresh take on the ancient Kimoto brewing method. The prized Nakadori portion from the press is bottled, offering great purity and clarity on the palate. There is a mellow rice sweetness and umami, and a sharpness to complement meat, dairy, pickled vegetables and fruits. Full bodied and structured.
We recommend drinking this from a white wine or Gabriel glass.
