Mature barrels (averaging 12 months) are then selected and blended to meet our desired character before being packaged and naturally bottle conditioned for a minimum of 3 months. Only then do is this unspiced wild ale released to be enjoyed.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eTasting Notes: Cardamom spice and fruit driven esters with a broad, unified palate across the finish. A line and length Gold blend as part of the final trio of blends from Brompton Street. Like all their beers, this is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures of 10-12°C.\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-family: -apple-system, BlinkMacSystemFont, 'San Francisco', 'Segoe UI', Roboto, 'Helvetica Neue', sans-serif; font-size: 0.875rem;\"\u003eHugely aromatic blend. Lots of pine needles, resin and the classic Blue Mountains Post Brood nose, with balanced acidity and a dry-waxy finish.
