L'Insolite ("The unusual") is Yoshiaki and Kyoko's top Pinot Noir, so named for its (unusual) 100% whole bunch fermentation.
L'Insolite starts as a fruit selection from each vineyard (Pisa & Northburn), where the best fruit is singled out, then taken all the way through ferment and maturation before being selected barrel by barrel as being deemed their best wine. i.e. each year the vineyard that L'Insolite comes from is not known until the wine is complete and finished and a barrel selection is made.
The 2018 vintage of L'Insolite is from the Pisa Terrace Vineyard, at the very foot of Mt Pisa where the soils are gravely, mineral abundant, well drained soils with quartz and schist.
Organically farmed, best-pick fruit selection, hand harvested, 100% whole bunch, wild fermented with no adjustments, alterations or additions of any sort, then basket-pressed into French oak barriques (0% new) for 20 months. Bottled unfiltered, unfined (vegan), with just 20mg/L sulphites added at bottling.
