The \u003cspan\u003egrapes were pressed, spontaneously fermented and aged on the lees in barrels for one year, with a longer rest in the bottle. Following \u003c\/span\u003e\u003cem\u003etirage\u003c\/em\u003e\u003cspan\u003e, the wine is re-fermented a la Champagne method by adding reserved grape must from the same vintage and, of course, there is zero doseage.\u003c\/span\u003e \u003c\/p\u003e\n\u003cp\u003eThe Pinots lend depth and fruit, while Chardonnay adds lift and precision.
