A new pastry sour based on an apple charlotte. This idea was suggested to them back in the summer in an instagram poll on what pastry / dessert items people would like to see in sour beer form & our lead brewer Dan was particularly enamoured by it. The resulting creation is, it must be said, incredibly delicious.Their oat heavy pastry base, fermented with our fresh sour mixed culture & conditioned on apples, apricots, cinnamon and vanilla. Pastore's first time using apple purŽe in one of their fresh beers and it has brought body and richness in abundance, combining with the vanilla to give a real custard sensation. The spiced cinnamon flavour is delicious and warming. And there's a little apricot there as well.
