As a former microbiologist, Lawrence spent his days looking at things that were too small to see with the naked eye. He would often imagine back to the time when he too, had been a single-cell. This well-cultured sour, shimmering in pink and purple hues, reveals the tart and sweet flavours of blackberry and rhubarb, but remains grounded by earthy undertones. Amongst millions of little microbes, Lawrence is back where he began.
