Translated as "The Jester" this is a light to medium-bodied delight with exceeding minerality and chalky tannins though the wine sings above its structural and textural elements with really exciting complex aromatics. The grapes are hand harvested from vines grown in decomposed limestone, quartz and granite soils, and undergo spontaneous fermentation and short carbonic maceration. Bottled unfined, unfiltered and no additional S02 added.
