GRAPE VARIETAL: Negroamaro (Origin: Puglia, Italy)
In the cellar whole clusters were fermented as carbonic maceration, with no pumping over or plunging for 14 days. After maceration the pressed wine was rested in 500L and 300L old French oak barrels for 4 months.
In preparation for bottling the wine was racked once by gravity, and 45ppm of Sulphur Dioxide was added, this being the only addition made.

Taste Profile: Nose explodes with flowers, purple jelly babies, meat, roast beetroot and a riot of spice. It sits on the plump side of medium bodied, but feels fresh and full of energy. Gorgeous silky palate trimmed with finely tucked in tannins. Sweet fruit keeps the beat for flavour, exotic Moroccan spices provide the accents. Gee this is great to drink.
Recommended Food Pairing: Flavourful pasta or pizza; antipasto (especially with spicy selection); spicy sausages; pepperonata on bruschetta or as an accompaniment to BBQ-ed fish or meat; spicy BBQ sting ray; well seasoned grilled tuna steak; grilled peppers & eggplant.
