A frank, intense and spicy wine... Minute Papillon is a pure Syrah "made in" Mamaruta, from the vines pampered by Marc Castan, very close to La Palme, in the Fitou appellation area. Harvested only in the morning, in boxes (by hand, of course), the grapes that will make this cuvée are a must!

With Minute Papillon , Domaine Mamaruta still offers us a devilishly pleasant bottle, with a fairly southern profile, but much more on the spices than on the alcohol! Very nice freshness, we love it! Open 30mins before.

Over 20 days maceration, and fermented and aged in barrels on lees for 10 months. The vineyards plots are spread over the communes of La Palme and Leucate on clay soils and limestone. Some are bordering a small lake, while others are close to a sea side cliff. The surface area is around 15 hectares. The yields are quite low, varying between 8 and 30hl per ha.
