Lapostolle Cuvee Alexandre Cabernet Sauvignon is made predominantly from grapes sourced from an old block of Cabernet Sauvignon vines in the Apalta Vineyard planted in 1920 on quartz and granitic soils. In the vineyard there is leaf removal and green harvest to fine tune yields and ensure the best possible ripe grapes are achieved. The grapes are harvested by hand into small, 14kg cases and then undergo state-of-the-art optical sorting at the winery to ensure only the best fruit reached the vinification process. 15% of the grapes are de-stemmed. After pressing the juice is fermented using wild yeast in stainless steel. The wine is then matured for 14 months in 225L French oak barrels. The barrels are a combination of  13% in new, 30% in second use and 57% third and fourth use oak, mainly medium toast from coopers including  Saury, Sylvain, Radoux, Seguin Moreau, Demptos and Taransaud.  No stabilization, no clarification and a very light filtration prior to bottling.
