The Gamma Ray is the wacky invention of Tom Belford at Bobar wines. This is 75% Gamay blended with 25% Cabernet Franc, 100% whole bunch and 100% free from any additions including sulphur. There were three barrels of Gamay and one of Cab Franc in the winery, all picked from the same vineyard - Tom blended them on a whim. It turned out a treat. This wine is a wild ride. It's bright and crunchy, yet funky and mercurial all at once. A wine unlike any you are likely to have tried before. Perfect for the adventurous drinker and the devoteés of the natural wine movement.
Profile: Pale ruby, almost pinkish in appearance. Touch of bitterness with slight herbaceous notes from Cab Franc. Airy, nips with raspberry, grapefruit, and blood orange and hints of grilled nuts and savoury, earthen notes to close. Finishing with soft wisps of tannin.
Recommended Food Pairing: Pates, terrines & rillettes; herbed meats; beef or pork burgers; salad with smoked meats or chicken; seared tuna or salmon; tomato-based dishes; Chinese stir-fries, sweet and sour pork or fish.
