The Hermit Ram Sauvignon Blanc Skin Fermented 2019 - Temple Cellars

BioGro certified Organic Sauvignon Blanc from North Canterbury glacial gravels with bands of limestone.

Four weeks on skins, fermented and matured in a combination of stainless steel and old French oak. Bottled unfined, unfiltered and with minimal SO2 at bottling (20ppm).

Expect to find stonefruit, a fine, tight light of acidity through the palate, and something with great mouthfeel and texture too. Stylistically, think of this wine as more a white wine with palate weight and tension rather than your typical orange or skin-fermented wine. Forget cloudy or hazy, this is wine with real purity and clarity.

Theo Coles made the first vintage of Hermit Ram Pinot Noir in 2012, all naturally, no additions and matured in neutral oak hogsheads. As the wine progressed through maturation it got better and better, and revealed its true vineyard character to Theo. It had an exciting mix of savoury fruit aromatics and salivating salty acidity. It had to be bottled. Today, the range of wines are expanding, exciting things are happening. In general the fruit comes from tiny, close planted sites on limestone. They are grown by wine lovers, not big enough to be onerous, planted to give joy. The vines are naturally farmed and the wines made with the minimal amount of additions. Old techniques are employed. They are wines of depth, complexity, individuality and most importantly drink-ability.
