Having fallen in love with wine in his youth, Sébastien Chatillon spent four years with René Mosse in Anjou. René opened his world to natural wine. “It was fresh, different, and in the morning I had no headache. A dream for a guy like me.”

Seb then moved to Paris for a girl. After seven years as a famous and infamous head sommelier Le Chateaubriand in Paris, he moved to the small village of Vallabrix in Gard to pursue a long-standing dream of making his own wine. He farms a total of 10ha divided in two parts, each with its own diversity in grapes, climates and soils.

Exercising both creativity and restraint in his wines, Seb puts his masterful palate to work by blending grapes from different parcels, varieties and colours. The result are wines with high drinkability, impressive balance and a distinct personal expression.
