Origin: Japan
Grapes: Delaware

A noteworthy orange wine brewed by Mr. François Dumas, one of the pioneers of natural wine in Japan, with the cooperation of "GRAPE REPUBLIC" in Nanyo City, Yamagata Prefecture.

Delaware from Yamagata Prefecture is fermented in amphora and aged in stainless steel tanks for half a year. A deep, dry, fruity orange wine with a charming aroma unique to Delaware followed by tea and whiskey nuances. It is recommended to drink it as an aperitif, or to sit down and enjoy it with food.

After destemming, the wine is immersed in amphora for 26 days and fermented with wild yeasts. It was then aged in stainless steel tanks for 6 months before being bottled on April 19th. No sulfites, no sugar, no fining, no filtration. The grapes are growing well, using the last grapes harvested in the region and fermenting well.

Great with salads, grilled fish and grilled chicken.
