In 2014, he was joined by Florien Kleine Snuverink, former owner of Amsterdam’s Café Schiller, who traded city life for the Jura after learning from Beaujolais legend Yvon Métras.\u003c\/p\u003e\n\u003cp\u003eToday, Jean-Baptiste and Florien farm around seven hectares across Arbois and Abergement, working organically across a patchwork of limestone, clay and marl soils. In the cellar, the approach is simple: native yeasts, no fining and no filtration.\u003c\/p\u003e\n\u003cp\u003eThe result is a range of exceptionally drinkable reds and whites that capture what makes the Jura so special.
